As I begin this post I’m wondering if I can add the word “housecleaning” and “cottage life” to my tags? I’m not literally cleaning my house and I don’t even own a cottage but I am cleaning up my blog and getting it organized for some serious regular posting. So does that count? I’m picturing the cobwebs that have developed here over the past years that I haven’t posted regularly and there’s quite a few. I also feel like I’m opening up the family cottage for the season, opening up the curtains and then the windows, dusting and removing the blankets that cover the furniture…you get the picture.
So today’s second post of the day is a feature of our Friday night “snack foods” night. A long time ago we started to make Friday nights our night for take out or an assortment of snack foods…i.e. chicken wings, nachos, dips…you know what I mean. Then, in an attempt to clean up the menu health wise I started getting creative and making the dishes more healthy but still somewhat decadent and indulgent. We still wanted to feel like we were having a snack food night after all. This night in particular I really didn’t want to cook at all so I made a hefty salad with romaine, peppers, cucumbers, red onions, mushrooms..really whatever fresh veggies I had in the fridge. I tossed it with our usual EVOO, balsamic vinegar, cracked sea salt and Greek seasoning’s. I added a few jumbo croutons and only 3 breaded chicken wings for each of us ( I confess…they were store bought ) and voila! So easy and quick and half healthy!!
We ate in the family room and watched a movie and you know what? That meal hit the spot!
