Today I bring to you Angela Liddon’s Baked Falafel Bites. I bought Angela’s Oh She Glows Cookbook months ago and I highly recommend it for anyone looking for healthy, fun and satisfying alternatives. Not only is the book eye catching and well laid out but her recipes actually work! I would also like to give a huge Thank You to Angela for allowing me to post these delicious little treasures of hers on my blog.
Okay, so don’t you find that the one downfall of trying to eat healthy is that you end up craving something crunchy…and yes I know carrots are crunchy but they just don’t do it for me when I’m looking for something with more… sustenance shall we say? So when I saw the recipe for the falafel bites I thought this just might be the answer that I’ve been looking for.
I followed Angela’s recipe to the tee except I didn’t have sprouted grain breadcrumbs so I used Panko breadcrumbs instead. I even made a few without any breadcrumbs just to see what they would taste like and the end result was superb. They were tasty and satisfying all at the same time. They taste great dipped in a salsa of your choice and if you add them in to a romaine leaf you can make a healthy fahita loaded with veggies and a light sprinkling of cheese…the options are simply endless.
(Or you can do like I did and just eat them as they come out of the oven)
