Hello my friends. I know it’s been awhile and I apologize. Life has been busy…good…but busy. I’ve missed my little spot here in the blogoshpere and it always feels good when I make it back here. Much like coming home at the end of a long day and being greeted by the warmth of my family.
To make it up to all of you out there I’m sharing with you a truly awesome snack food recipe. You know something is good when you can’t stop snacking on them while you’re trying to take a picture and I don’t know anything simpler to make than these roasted chickpeas. They are a great protein snack to grab when you’re on the run and are safe snack food choice for pretty much any diet or allergy out there. Experiment with your own seasoning’s and see what you come up with – I guarantee you – you CAN NOT go wrong with this one. Oh and did I mention your kitchen will smell AMAZING while those little babies are roasting away?
Ingredients & Instructions:
1 can of chickpeas, drained and rinsed and dried. Use a tea towel or napkins to properly dry the chickpeas
Extra Virgin Olive Oil to lightly coat the chickpeas
Seasoning: I used Garlic, Cracked Sea Salt, Korean red pepper, Paprika
Roast at 350 degrees for a minimum of 30 minutes. I like to roast them for 60 minutes to get a nice crispy shell going.
