How to make THE best chicken fingers EVA!

Boy do we love our chicken cutlets. Not only are they a family favourite they are always hit where ever I bring them. They are great for EVERYTHING…lunches, dinner, picnics, golf games, snacks…you name the occasion and I can guarantee you these cutlets will fit right in.

The most tedious part of making this meal is going to be the part where you have to deal with the raw chicken. I am not a fan of cutting raw chicken but for chicken cutlets I will grin and bare it. Cut the chicken breasts (or boobies as I like to call them) into strips. In a bowl that is large enough to fit all of your chicken strips, beat a couple of eggs. You can add garlic powder to your eggs at this point. Add your chicken strips into the egg mixture and make sure they are all coated. Next dip them one at a time into the bread crumbs (I like to use the brand called Pastene -Italian flavoured) and make sure they are completely covered. Give them a quick fry on each side before you put them on a cookie sheet. Bake at 350 degrees until they are fully cooked. Make sure not to over cook them otherwise they will not be as moist as they should be. Your chicken should be moist and juicy on the inside with a flavourful breadcrumb crust on the outside…and your kitchen will smell amazing.

You can dress up your platter of cutlets or fingers with slices of lemon, parsley and even cranberries for a more festive look.
