Its that time of year when the nights are getting cooler, the leaves are changing and the days are getting shorter. I just love this time of year (except for the shorter days). There are so many holidays and celebrations on the way I can’t help but feel the excitement in the air building up. For our family there’s the making of the tomato sauce, the wine and roasting of the red peppers. I’m also enjoying watching all the school buses that are on the road, that Halloween is around the corner, Thanksgiving & then the big finale…Christmas and New Year’s Eve. No wonder people are depressed in January!
With all of the walking I’ve been doing lately I find myself looking for creative and healthy snacks to add to my “go to” list. So I made these awesome peanut butter banana bites one evening and they were a hit with everyone in the family. So simple and easy you can prepare them ahead of time. If you’re freezing them for a later date then I would let them defrost for a bit because they are quite hard to bite into when fully frozen…unless of course you’re enjoying some crazy Fall Indian summer heat-wave.
Ingredients: I feel silly doing this part since just looking at the picture should be enough.
Assemble and eat or place in the freezer for a later date.
